Bacon Jam Father's Day Gift Recipe + DIY


As promised, I whipped up a BIG batch of bacon jam to give to all the special dads (and some non-dads *ahem Brandon*) that I know. So much bacon. So many onions. I walked around smelling like bacon and onions all day Saturday. Here is my spin on the original post from Fork Spoon Bacon. Happy gifting, Mamas!

Bacon Jam (I made this recipe x 3)
Ingredients
1 1/2 pounds of thick cut bacon, chopped
2 teaspoons of butter
4 large yellow onions, diced
1 teaspoon of salt
1/4 cup brown sugar
1/4 cup sherry vinegar
1 1/2 teaspoons of fresh thyme leaves, divided
1 teaspoon freshly ground black pepper
1 pinch of cayenne pepper
1/2 cup of water
2 teaspoons balsamic vinegar
2 teaspoons of extra virgin olive oil

Instructions
1. Cook bacon in heavy-bottom pot over medium heat until bacon is crispy. Pour bacon and rendered fat into a strainer placed over bowl. When fat is drained and bacon is cool enough to handle, remove bacon and chop.
2. Return pot to medium heat. Add 2 teaspoons of bacon fat and butter to the pot. Saute diced onions and 1 teaspoon of salt until soft and translucent.
3. Stir brown sugar, sherry vinegar, 1 teaspoon of thyme leaves, black pepper, and cayenne into onion mix. Add bacon, mix. Add water, mix. Cook until jam is brick-brown bacon color and has a jam consistency (10-15 mins).
4. Remove from heat and stir in balsamic vinegar, olive oil, and remaining 1/2 teaspoon of thyme in jam.


Materials needed for packaging
1/2 pint jars from Walmart. Larger jars are available but I don't want to be blamed for any clogged arteries.
Twine, string or cording in desired color
Jam spread knives from Amazon
Labels from Fork Spoon Bacon
Packing tape for attaching labels to jars

Instructions
Cut labels to size and secure them to the jars using packing tape.
Fill the jars and wait for them to completely cool before putting the lids on. 
Tie the jam spreaders to the jars using cording.
Refrigerate until ready for gifting.

Closet Envy: I'm All That and Dim Sum Tee

You know me. I love a good tee. I spotted this tee on Food52 during the holidays and put it on Parker's Christmas list. Since no one bought it, I decided to get it for him myself because the foodie humor is too much for me to resist. He wore it to the Valentine's Day dinner party we attended over the weekend and looked super festive.

Foodie Friday: Slow Cooker Enchilada Pork Tacos with Sweet Corn Slaw

A couple of weeks ago, Tuan showed me Half Baked Harvest's Instagram account and asked, "Can you make me everything from this blog? It looks so good." The man was speaking the truth. Everything on Tieghan's blog looks delicious and her photos are gorgeous and beautifully styled. My photos are not beautifully styled but I can say that everyone enjoyed the Slow Cooker Enchilada Pork Tacos with Sweet Corn Slaw that we had for dinner last night. I tweaked the recipe a bit to feed 5 adults (included 3 men) and save myself time. Despite the amount of green chiles and jalapenos I used, the tacos were not spicy at all. They actually could have used a little kick so make sure to have a bottle of tapatio on hand if you make this. The slaw was crunchy, refreshing and a great addition to the taco. This was a great recipe to enjoy while watching Thursday Night Football.


Ingredients for pork:
5 pounds of pork shoulder
1 oz package of taco seasoning
2 cans (14 oz) of diced green chiles
1 sweet onion, diced
2 cans  (10oz) of enchilada sauce

Ingredients for slaw:
1 bag of honey roasted sweet corn
1 tablespoon of olive oil
salt and pepper, to taste
1 bag of angel hair coleslaw
2 jalapeonos, seeded and diced
Juice of 2 medium limes
3 teaspoons of rice vinegar
1 cup of chopped fresh cilantro

30 tortillas
Cotija cheese, crumbled
Hot sauce


Directions:
Add pork ingredients to slow cooker, stir until well mixed. Cover and cook on low for 8-10 hours.

Heat bag of honey roasted sweet corn in pan with 1 tablespoon of olive oil. Transfer to bowl. Add the rest of the slaw ingredients to the same bowl. Toss well. Cover and place in fridge until ready to serve.

When the pork is cooked and falling apart, remove from slow cooker and shred with two forks. Drizzle with sauce left in slow cooker.

Assemble tacos be layering pork, slaw and cheese on top of warmed tortillas.

Review of Rita's Italian Ice

Rita's has arrived in San Diego! The east coast chain is in the process of opening locations all over San Diego. When I say all over, I mean all over including locations in Scripps, Mira Mesa, Santee, Clairemont, Bay Park...the list goes on and on. They are opening a total of 70 locations.  This is not new news but we finally had the chance to visit the Rancho Penasquitos location. My verdict? It doesn't even begin to compare with the beloved OC institution that is Joe's Italian Ice. I'm not just saying that because I am from OC either. I'm sure the original Rita's is awesome but when special stand alone shops become a chain, something is always lost in the translation and flavors tend to get watered down or lose their originality. It's like comparing Katz's Deli to Subway, there is just no comparison. Rita's offers a wide range of flavors and it was tough to decide which ones we would try but we definitely avoided anything with the words "Starburst" next to it. In the end Tuan and I ordered mango and passionfruit gelatis and we enjoyed them outside on the patio. Not going to lie, I was disappointed. Tuan declared that it's not that bad and he's right but when you've had Italian ice with fresh fruits and know what good Italian ice tastes like you can't help but be disappointed.

A Book Review of Bebe Gourmet

According to our pediatrician, it's time to start adding meat to Parker's diet because breastmilk and veggies alone do not provide him with as much iron as he needs. When I received this news, I immediately began scouring the internet for baby food recipes that include meat. Unsatisfied with anything I found online, I began looking for baby cook books and found **drum roll please** Bebe Gourmet: 100 French-Inspired Baby Food Recipes for Raising an Adventurous Eater by Jenny Carenco. I received the book yesterday (yay for Amazon prime!) and, after a quick flip through, am so excited to prepare some of the meals for Parker. I know it seems silly to need recipes for purees but Jenny's recipes sound so amazing they make ME want to eat baby food. In fact, this smart little book also offers advice on how to translate the baby food recipes into meals for the whole family to save on prep and cook time. There are also bits of info from Dr. Jean Lalau Keraly, a Pediatric Nutritionist and Endocrinologist.

If you have been following the blog, you know that Tuan and I love to eat out and try new food. I hope that this book will awaken Parker's inner foodie.
